What mandi is
Mandi comes from Yemen and is now loved across the Arabian Peninsula. It is a rice dish, but the rice is only half the story. The meat is cooked slowly and the rice is cooked to soak up its juices and aroma, so the two arrive together, fragrant and gently spiced rather than hot.
It sits a little apart from the rest of our menu, and it is there because our guests come from across South Asia and the Middle East, and so does our cooking.
Mandi or biryani?
Guests often search for mandi biryani, but they are different dishes. Biryani layers spiced meat and rice with masala. Mandi is gentler: the meat and rice are cooked to share their aroma, without a heavy masala, so the flavor of the meat leads.
