Biryani in Alpharetta

The biryani Alpharetta keeps coming back for: long grain basmati, layered with spiced meat and saffron, then sealed and slow cooked on dum. Chicken, mutton or vegetable, and a platter when the whole table is in.

How we make it

A proper biryani is two things cooked separately and then brought together. Spiced meat in its masala below, long grain basmati with saffron above, layered in one pot.

For our Mutton Dum Biryani the pot is then sealed and slow cooked, so the rice finishes in the steam rising from the goat underneath. That step is called dum. It takes longer, and it is why the dish carries the word in its name and why every grain comes out separate and fragrant.

Which biryani to order

  • Chicken Biryani. Basmati layered with spiced chicken and saffron. The one to start with.
  • Mutton Dum Biryani. Goat and basmati, sealed and slow cooked on dum. Richer, deeper and a little more traditional.
  • Vegetable Biryani. Basmati layered with garden vegetables, for vegetarian guests who still want the full biryani experience.
  • Biryani Platter. Chicken or goat biryani with one side, one curry and naan, made for three to four people to share.

What to eat with it

Biryani stands on its own, but most tables add a curry and bread. Butter chicken and Nalli Nihari are the usual partners, and a cold mango lassi takes the edge off if you asked for it spicy. Every biryani can be made mild, medium or spicy.
